Top Notch Zucchini Bread Recipe

It has become a tradition for my family to make our delicious zucchini bread each summer with the large green squash we grow in our garden. Sweet and moist, this bread is a fantastic treat. And easy to make too!

Here’s what you will need:

3 cups flour

1 tbsp. cinnamon

1 tsp. salt

1 tsp. baking soda

¼ tsp. baking powder

3 eggs, beaten

1 cup sugar

1 cup brown sugar, firmly packed

1 cup vegetable oil

1 tbsp vanilla extract

2 cups grated zucchini

½ cup chopped nuts (optional)

Makes two 4 ½ x 8 ½ loaves.

Preheat the oven to 325°F.

Sift flour, cinnamon, salt, baking soda, and baking powder into a medium-sized bowl. Set aside.

In a large bowl thoroughly beat eggs, sugar, brown sugar, vegetable oil, and vanilla.

Stir in sifted ingredients until smooth and of thick consistency.

Blend in the grated zucchini and add in the nuts. The batter should be moist, but not runny. If needed, add in more zucchini.

Bake in the oven for 60-70 minutes. The bread should be moist and a toothpick will come out clean.

Slice and enjoy!
